A Mediterranean feast for two

Tonight's dinner was a hit! We had tabouli, falafel, hummus, pita, Greek burgers and a mountain of vegetables.


Tabouli is a cold salad of bulgar wheat, olive oil, lemon juice, tomatoes and cucumber. I first had tabouli at Jamil's Steakhouse in Tulsa, I've loved it ever since.


Ina has a recipe for scratch tabouli, but this mix is so easy - just add boiling water, a splash of olive oil and lemon juice, and diced veggies. High fiber, low fat and super tasty.


Next came falafel: add water and fry. Eat and enjoy. Couldn't be easier.


Drew whipped up some hummus and helped me with the Greek seasoned burgers, then we feasted.
