I'm gonna need some pasta

This evening I tried a new thing, homemade marinara sauce. It all started with a gigantic can of whole tomatoes from Costco.

This recipe is a combo of The Simplest Tomato Sauce from Annie’s Eats and my friend Janal's recipe (which is the Nordstrom Cafe's roasted garlic marinara recipe).

Gather a HUGE can of whole, peeled tomatoes, three onions, garlic, butter, salt and sugar.


Over low heat melt the butter and sweat the garlic - being careful not to burn the garlic.


Meanwhile peel and have the onions, being careful to leave the onion root in tact - this will make the removal of the onions much easier.

Add the onions to the sauce and cover with the entire can of tomatoes. Stir gently and bring to a low simmer, simmer for a full hour stir occasionally "smashing" with tomatoes with a wooden spoon. After an hour remove the onions, add 1 t. of sugar and salt to taste.


The Simplest Tomato Sauce from Annie’s Eats
Ingredients:
1 (28 oz.) can whole peeled tomatoes, with juices
1 onion, peeled and halved
5 tbsp. unsalted butter
Salt, to taste

Directions:
Combine the tomatoes, onion, and butter in a medium saucepan over medium heat. Bring the mixture to a simmer, then reduce the heat to keep the sauce at a low, steady simmer for 45 minutes. Stir occasionally, crushing the tomatoes against the side of the pot with a wooden spoon. Remove from the heat, discard the onion, and add salt to taste. (I didn't add any salt.) My adaptations:
1 (106 oz.) can whole peeled tomatoes, with juices
3 onions, peeled and halved
18 tbsp. unsalted butter (2 full sticks plus 2T)
1 heaping T of finely minced garlic
Salt, to taste
Pinch of sugar
